MILE HIGH BISCUITS (OR SCONES)
3 Cups Flour 4 1/2 Tsp. Baking Powder 3/4 Tsp. Cream of Tartar 3/4 Tsp. Salt 3/4 Cup Crisco Golden Shortening 1 Large Egg 1 Cup Milk (2 1/2 Tbsp. Sugar if using for Strawberry Shortcake) Mix dry ingredients together. Cut in shortening. Make a well. Mix egg and milk together. Pour into well. Mix well. Turn out onto lightly floured board. Knead gently a few times. Shape into a round, but do not press down or use a rolling pin! Make sure it is about 1" high. Cut with floured glass if you want biscuits. For Scones - cut round into 4-6 pieces. Sprinkle lightly with white sugar. Bake at 350 degrees approximately 30 min. or until nicely browned. When placing them on the lightly greased cookie sheet, put the biscuits together so they touch. If you are making scones, have them separate. I always add currants or raisins during the mixing - a nice sprinkling. Catherine |
