ROCK BUNS Ingredients: 8 ounces flour 4 ounces margarine 4 ounces sugar 4 ounces raisins 1 teaspoon baking powder pinch ginger pinch nutmeg 1 egg half in half milk as required Method Rub shortening into the flour, then add the sugar and raisins and mix well. Add the baking powder and spices and mix thoroughly. Make a well in the center and add the beaten egg with enough half in half milk to let the ingredients stick together and make a fairly stiff dough. Grease a couple of baking sheets and drop large spoonfuls of dough onto the sheets about two inches apart. Bake in a 375 degree oven for approx 15 minutes, or until the edges are beginning to color. Remove from oven and place on cooling trays. As you can see this is a very basic recipe,and like shortbread, can be mixed together and baked very quickly. I do weigh my ingredients for this on a scale, and so these are dry weight ounces..Also if I remember correctly, the original recipe called for mixed spice, but one day when I ran out, I experimented with nutmeg and ginger, and the family now prefers them.
