HILDA'S SCONES
2 cups self rising flour 1 tablespoon sugar A quarter cup of butter (softened)~~~(4 ounces) a quarter cup of currents or raisins 1 egg, slightly beaten two thirds of a cup + 2 tablespoons of cream ( or half in half) Method Preheat oven to 400 degrees. Combine flour and sugar, cut in butter ( till it resembles coarse bread crumbs)add fruit. Stir to combine. Mix egg and cream. stir into the flour mixture with a fork until the dough is just moist enough to hold together. On lightly floured board, knead dough 8-10 times until smooth. Shape into a ball and roll or pat dough into an 8 inch circle, half an inch thick. Transfer to prepared cookie sheet, and cut into 12 pie shaped wedges. Bake for 12 minutes until golden. transfer to a wire rack and serve warm with butter and preserves. I would add that butter needs to be used, and as for the amount of cream, I would mix about two thirds of a cup with the egg, and mix in cautiously to see if this will make the mixture moist enough without adding the extra tablespoons. These are so easy to make, and I usually make more than one batch and freeze them. Happy baking. Hilda |
