BLUEBERRY MUFFINS 1/2 cup softened margarine or butter 1 cup sugar 2 eggs 2 cups flour 2 tsp. baking powder 1/2 tsp. salt 1/2 cup milk 1 tsp. vanilla 2 cups blueberries Cream margarine or butter with sugar using a mixer until light and fluffy. Add eggs one at a time beating well after each. Combine flour, baking powder and salt and add to creamed mixture alternately with milk and vanilla. Crush 1/2 cup blueberries and add to mixture using a mixer. Fold in the remaining blueberries using a spoon. Spoon into muffin tins that have been sprayed with a non-stick vegetable spray and bake for 25-30 minutes at 375. Use a toothpick to check doneness. Makes 2 dozen muffins. From Maggie |
