BREAKFAST IN A COOKIE Preheat oven to 375�. Mix together in a small bowl and set aside to soak for ten minutes: 1 cup oat bran � cup orange juice Mix together in a large bowl using an electric mixer: 1 cup plus 1 tablespoon applesauce, unsweetened 1 tablespoon canola oil 1 cup honey 1/3 cup firmly packed brown sugar 3 eggs or egg substitute 1 � tablespoon vanilla 1 tablespoon grated orange rind Measure into a sifter and sift into the large bowl: 3 cup whole wheat pastry flour* 1 tablespoon baking powder 1 � teaspoon baking soda *If you don�t have whole-wheat pastry flour, you can substitute with 1 � cups whole wheat and 1 � cups all purpose flour. Add the soaked oat bran and remaining ingredients to the large bowl and mix thoroughly with a strong wooden spoon. 1 cup non-fat dry milk 3 cups dry oats (quick cooking or old fashioned) 1 cup nuts 1 cup raisins Spray baking sheets with non stick cooking spray. Drop by slightly heaping tablespoons, a full 2 inches apart. Bake for 12 to 14 minutes.
