MAPLE-BACON OVEN PANCAKE This is a great change from ordinary pancakes! 1-1/2 cups biscuit/baking mix 1 tablespoon sugar 3/4 cup milk 2 eggs 1/4 cup maple syrup 1-1/2 cups (6 oz.) shredded cheddar cheese, divided 1/2 pound sliced bacon, cooked and crumbed Additional syrup, optional In a mixing bowl, combine biscuit mix, sugar, milk, eggs, syrup and 1/2 cup cheese; mix well. Pour into a greased 13-in.x9-in.x2-in. baking dish. Bake, uncovered, at 425 degrees F. for 10-15 minutes or until a toothpick inserted near the center comes out clean. Sprinkle with bacon and remaining cheese. Bake 3-5 minutes longer or until cheese is melted. Serve with syrup if desired. Yield: 12 servings.
