SAUSAGE BISCUITS

A nice, warm breakfast for "running out the door" days.

1 lb. sausage (we like Jimmy Dean's hot pork)
2 2/3 cup flour
2 TBSP. sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup shortening
1 pkg. yeast
1/4 cup warm water
1 cup buttermilk
melted butter/margarine

Dissolve yeast in warm water and let stand for 5 minutes.
Cook sausage, drain and crumble. Combine next five ingredients**, mixing well. Cut in shortening until it resembles course meal. Add yeast mixture to buttermilk, stirring well. Add buttermilk mixture to dry ingredients. Knead in sausage and turn onto a floured surface. Knead 3 - 4 times and roll out to about 1/2 inch in thickness. Cut into biscuits and place on an ungreased baking sheet. Bake at 425* until starting to brown (approximately 10 minutes), brush with melted butter and return to oven until golden brown (about 5 minutes more).

** I have substituted self rising flour for the regular flour, soda, and salt with good results.
