FRESH APPLE CAKE

2 eggs
2 cups sugar
1 1/4 cup oil
3 fresh apples (very finely chopped)
1/2 cup nuts
3 cups flour
1 tsp salt
1 tsp baking soda
1 tsp cinnamon
2/3 tsp allspice
1/8 tsp nutmeg

Mix eggs, sugar and oil. Mix spices with flour and add to first mixture along with apples and nuts. Bake in greased and floured bundt pan. Bake at 350F 50 to 60 minutes. Let cool for 15 minutes and then remove from pan and cool on wire rack. This is a very moist solid cake. It's almost the texture of a bread rather than a cake and it freezes really well.
