CHOCOLATE SOUFFLE
This is a no-fail recipe I came across a couple of years ago...it's as good as the real thing without the fears of a falling souffle! 2 tablespoons margarine 2 tablespoons flour 1/2 cup milk 1/2 teaspoon salt 1 8 ounce package cream cheese, cubed 2/3 cup sugar 2 1 ounce squares unsweetened chocolate, melted 1 1/2 teaspoons vanilla 4 eggs, separated make a white sauce with margarine, flour, milk and salt. Add cream cheese, 1/2 cup sugar, chocolate and vanilla; stir over low heat until smooth. Remove from heat. Gradually add slightly beaten egg yolks; cool slightly. Beat egg whites until soft peaks form. Gradually add remaining sugar, beating until stiff peaks form. Fold cream cheese mixture into egg whites. Pour into 1 1/4 quart souffle dish or casserole. Bake at 350 for one hour. Serve immediately. Makes six servings. Source: Unknown Andrea |
