SUGAR COATED PEANUT TREAT

This is a family tradition for us -- the kids and neighbors can't wait for these each year. Make them once and you'll see why...they are easy and delicious and make a great giveaway goody jar! Very festive.

2 cups RAW peanuts, shelled (I get them in the produce section with the other nuts)
1 cup sugar
1/2 cup water
2-3 drops red food coloring

In a 3 quart pan, mix water, sugar and food coloring. Add peanuts and heat until a good rolling boil. Stir occasionally as you cook these on medium high. In about five minutes you will notice liquid thickening. Stir constantly until liquid is gone (watch carefully because it cooks out fast at the end). Remove immediately from heat and dump into the middle of a cookie sheet and separate nuts all over the sheet. Place in the middle of a preheated 300 degree oven and cook for 10 minutes. Stir and break apart any connecting nuts with a fork and place back in oven for 10 more minutes (do not brown). Cool and store in an airtight cannister.
