COCONUT PIE

2/3 cup sugar
1/3 cup flour
1/4 tsp. salt
2 cups milk, scalded
3 slightly beaten egg yolks (save the whites for the meringue)
2 TBSP. butter or margarine
1 cup coconut
1 tsp. vanilla
9 inch cooked pie shell


In top of a double broiler, mix sugar, flour and salt; add milk gradually, stirring constantly until very thick. Add egg yolks slowly. Cook 2 more minutes. Add butter. Cool. Add coconut and vanilla. Pour into pie shell.

Make a meringue with the 3 eggs whites and 4 TBSP of sugar. Sprinkle coconut on top and bake at 350* for 12 - 15 minutes or until brown. Then cool.
