BLUEBERRY CHEESE CAKE 1 3/4 cup graham cracker crumbs 1/3 cup margarine, melted 1 1/2 cups sugar, divided 3 8 oz. packages of softened cream cheese 2 tsp. vanilla 3 eggs 1 cup sour cream blueberry sauce In a bowl combine graham cracker crumbs, margarine, and 1/4 cup sugar. Press mixture on bottom and up 2 1/2 inches on side of a spring form pan and set aside. In a bowl using a mixer, beat 1 1/4 cup sugar, softened cream cheese, and vanilla until creamy. Beat in eggs one at a time and blend in sour cream. Spread in prepared pan. Bake at 350 degrees for 60-70 minutes or until center is set. Turn oven off, leave door slightly ajar and keep in oven 1 hour. Remove and cool completely. Remove side of pan. Top with one recipe of blueberry sauce (below). Slice and serve. Serves 10. Blueberry Sauce 2 cups blueberries 1/3 cup sugar 1 TBSP lemon juice 1 TBSP cornstarch 1 tsp vanilla Crush blueberries in sauce pan. Add sugar, lemon juice and cornstarch.
