CHICKEN CARDONI
1/4 C oil 2 cloves garlic - chopped 1/2 med onion - chopped 1/4 C celery - chopped 1 med can tomatoes 1 6oz can tomato sauce 1/4 C tomato paste Sweet Basil Salt/Pepper Chicken pieces (skinless if you like) Wash/dry chicken pieces. Heat oil in skillet. Add the chicken pieces and brown on all sides. Pour off grease. Reserve 1/4 cup. Place the garlic, onion and celery on top of the chicken. Add the can of tomatoes with its juice. Add the tomato paste and sweet basil. Simmer for 30 minutes. Serve over a bed of wide egg noodles or rice. Recipe from my Mother, Claire Cardoni Terri |
