CHICKEN AND SAUSAGE JAMBALAYA
1 package chicken breasts cut into bite size pieces. Marinate them in Durkee's Hot Sauce for two hours... I just marinate it while I'm getting everything else together. Saute 1 onion, 2-3 cloves garlic, 1 cup celery, 1 each of green, red,and yellow peppers. Add marinated chicken (and dump in the hot sauce), 1 bunch of green onions, 1 pkg smoked sausage cut into bite size pieces. (I use smoked turkey sausage or just use the regular polska kielbasa) Combine 1 24 oz can whole tomatoes (cut into pieces along with the juice), 4 cups chicken stock, 2 cups Uncle Ben's Converted Rice and 10 drops tabasco sauce. (I have no idea why, but Uncle Ben's is the only rice that works in this recipe. Trust me I have tried others!) Add 1 teaspoon Oregano, 1/2 teaspoon each of black pepper, white pepper, and red pepper, 3/4 teaspoon thyme. Combine - chicken stock, rice, tomatoes and spices in large roasting pan. Bake at 350 degrees for approximately one hour or until rice is cooked and the liquid is gone. (Hint Once you have mixed everything together, don't stir it anymore until it is finished, turns the rice into mush). Tastes great served with Cheese and Beer Bread Source: Debbie Benner Andrea |
