ROLLED PARMESAN CHICKEN This is from a book called "Holiday Favorites" but my family loves it all year. Great for company. 8 boned,skinless chicken breast halves Salt Pepper 1/2 cup butter, melted 1 cup Parmesan Cheese 11/2 cup cracker crumbs, finely ground 8 toothpicks Season chicken with salt and pepper. Combine Parmesan cheese and cracker crumbs. Dip each chicken breast in butter, then roll in cheese mixture. Roll chicken and place in baking dish seam side down. Secure with toothpick. Sprinkle top of chicken rolls with additional Parmesan. Bake at 350 for 45 min-1 hour. Antoinette |
