THE STAGGS SALAD

1 head butter lettuce, torn into bite size pieces
3 - 4 cups mixed baby lettuces ("Spring Mix")
1/4 cup dried cranberries
1/4 cup toasted pecans
2 Roma tomatoes, seeded and sliced julienne
8 - 10 tablespoons olive oil
4 - 5 tablespoons balsamic vinegar
2 tablespoons dijon mustard
1 teaspoon dried oregano
salt and pepper to taste

In a large mixing bowl whisk together the olive oil, vinegar, mustard, oregano, and salt and pepper. Add the lettuce mixture and toss well. Add the cranberries and pecans, toss well. Plate the salad and add 3 - 4 slices tomato, 5 - 6 croutons and one cheese cup.
