CHICKEN SALAD

2 boneless skinless chicken breasts
3 - 4 tablespoons mayonnaise
4 - 5 tablespoons cashews, crushed
1 -2 tablespoons raisins or dried cherries, chopped finely
1 small roma tomato, remove all seeds and chop finely

Cook or steam the chicken breasts. Let cool and dice into tiny pieces. (Do not cube...you want the smallest pieces possible)
Combine the mayonnaise, cashews, raisins, tomatoes and chicken. Mix thoroughly.

I serve this on a whole grain bread with alfalfa sprouts.
