LENTIL SOUP

Sort 1 lb. of lentils for stones. Put in 4 qt. pot and cover with water.
Add one small onion, chopped fine; 2 carrots, chopped small.
Bring to a gentle boil, cooking lentils until soft, adding more water to keep them covered.
After soup is cooked, salt to taste, then add 2 TBSP vinegar and 2 tsp sugar.
Simple, yet excellent!
