CABBAGE STEW

This a Morgan family favorite! Even people who don't like cabbage (like me) LOVE this stew!

3 large carrots, sliced
2 medium onions, chopped
1/2 large bell pepper, chopped
1/2 medium head cabbage, shredded
1 28 oz. can green beans
1 28 oz. can peeled tomatoes, chopped
1 10 oz. diced Rotel tomatoes (optional)
2 pkg. Ranch style salad dressing mix (original)

Combine in a large pot: carrots, onions, bell pepper, cabbage and 1 cup water and cook 10 minutes covered.

Add remaining ingredients and bring to a boil. Cover and turn heat down. Let simmer 30 minutes or longer.

This soup is healthy and very low in calories for you weight watchers. The rotel gives it a great "kick" and the spices from the Ranch dressing mix are wonderful. You can also add chicken or beef but will keep in the fridge for a long time without any meat. Enjoy with crackers for a warm, healthy meal!
