MICROWAVE LEMON CURD

8 Tbsp. Butter
Grated Peel 1-3 lemons your choice)
1/2 Cup Fresh Squeezed Lemon Juice
3 Large Eggs
1 Cup Granulated (White) Sugar

Microwave butter about 3 min. on high till melted. In separate bowl, whisk together the eggs, sugar, lemon peel and juice till well combined. Whisk into melted butter. Microwave on high at 2 min. intervals, whisking after each until thick enough to coat a wooden spoon (usually about 4 times in my microwave). Store in a glass jar up to 4 weeks in the refrigerator.
