A REBEL'S DEVILED GRITS
1 teaspoon salt 3 cups boiling water 1 cup quick-cooking grits 1/4 cup butter 1 teaspoon grated orange rind or peel 1 cup orange juice 4 eggs, slightly beaten 12 slices bacon, partially cooked 2 tablespoons brown sugar Preheat oven to 350*. Add salt to boiling water in a saucepan and stir grits in slowly. Cook, stirring constantly for 3 minutes. Remove from heat. Add butter, orange rind, orange juice, and eggs and mix thoroughly. Pour into a greased 1 1/2 qt. baking dish. Arrange bacon on top and sprinkle with brown sugar Bake for 45 minutes or until knife inserted in center comes out clean. Serves 6.
