BROCCOLI QUICHE

This is an adaptation of a couple of different quiche recipes. I decided to make it with a puff pastry rather than a regular pie crust and really liked the results.

One sheet puff pastry, thawed

4 cups broccoli, coarsely chopped
1 cup shredded cheddar cheese
1/2 green bell pepper, diced
1/2 red bell pepper, diced
1 tablespoon flour

4 eggs, slightly beaten
1 1/2 cups milk, or heavy cream
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder

Place thawed puff pastry sheet in a pie pan or quiche dish, cover with foil and bake (unpricked) at 450F for 10 minutes. Remove foil and bake for an additional 5 minutes.

While puff pastry is baking, combine broccoli, peppers, cheese and flour in a medium mixing bowl. In a small mixing bowl, combine eggs, milk, salt, pepper and garlic powder.

Remove puff pastry from oven. Reduce temperature to 325F and place broccoli mixture in the bottom of the dish. Pour the egg mixture over the broccoli mixture. Bake for 35 to 40 minutes or until a knife inserted near the center comes out clean.

*This is also really good by using asparagus and swiss cheese as an alternative to broccoli and cheddar.
