TOMATO PIE
2 large tomatoes - seeded and thinly sliced 2 T flour 1 sweet onion - minced and divided 1/2 C chopped fresh basil divided 1/2 t salt divided 1/2 t pepper divided 3/4 C creamy Mustard - Mayonnaise blend 1 pie crust shredded cheese - your pick
Toss sliced tomatoes with flour and arrange one layer of tomato slices over the cheese. Sprinkle evenly with half onion, basil, salt and pepper. Repeat procedure with remaining tomato slices, onion, basil, salt and pepper - to the top. Stir together 1 C cheese, mustard and mayonnaise to blend. Spread over the top of the pie. Bake at 400 for 24 minutes (lightly browned). Let stand 10 minutes before serving. Make one 9 inch pie. Southern Living Magazine, July 2002 Submitted by Terri Derrick |
