FRESH HUMUS
15 or 16 oz can of chickpeas 1 to 2 tbsp. liquid from can of chickpeas 2 to 3 tsp. fresh lemon juice (to taste) 2 to 3 cloves fresh garlic salt (to taste) 1 tsp. sesame oil (optional) Drain chickpeas and reserve liquid. Combine chickpeas with remaining ingredients in blender or food processor adding only 1 tbsp of liquid from can. Cover and process at high speed until completely smooth. Add more liquid as necessary. Refrigerate in covered container. Makes 1 1/4 cups. Serve with pita bread or tortilla chips. From: Bruce Royer Andrea |
